Beef Rolls – Zrazy

Pronounced ZRAH-zih. This is a beef dish invented somewhere in the Polish-Lithuanian Commonwealth. When and where is unknown. All that is know is that it is delicious.

  • [4-6] Thinly Sliced Steaks
  • [1-2] Chopped Onions
  • [9-12] Slices of uncooked bacon
  • [3 tbsp] Olive Oil
  • [4-6] Pickles
  • [4-6 tspn] Dry Mustard
  • Salt & Pepper to Taste
  • [1 Cup] Beef Stock
  • [3 tbsp] Greek Yogurt
  • [1 tbsp] Cornstarch
  1. Preheat oven 350 degrees.
  2. Season meat with mustard, salt, and pepper.
  3. Roll meat up with onion and pickle, wrapped in bacon. Secure with a string or toothpick.
  4. Heat large saucepan with olive oil and brown all sides of rolls.
  5. Remove rolls and place in glass backing dish.
  6. Deglaze pan with beef stock and pour over rolls. Add any leftover onion or pickle that could not fit in the rolls.
  7. Braise for 1 hour in the oven.
  8. Remove rolls and pour liquid in a small pot. Bring to boil and whisk in cornstarch until thickened.
  9. Serve sauce and yogurt over rolls and enjoy.
